There’s no need to wait for a special occasion or our local lobster season (October-March) to treat yourself to the “king of seafood!” Our frozen lobster tails are carefully harvested from American lobster (Homarus americanus) – a species of cold water lobster found on the northern Atlantic coast of North America – then brine frozen and glazed to optimize flavor and freshness. Although lobster lovers debate the flavor and texture of East Coast vs. West Coast lobsters, everyone agrees that the tail is the sweetest, most succulent part. Our tails are 4-5 ounces each, making one tail per person the perfect size for “surf and turf” or serving alongside several other items. If you want the tails to be the focal point of the entrée, we recommend two tails per person. You can also use the tail meat for other dishes, such as lobster bisque, lobster mac and cheese, po’ boy sandwiches and more! Sustainability North America’s lobster fishery is one of the most successful fisheries in the world, thanks to its highly regulated nature and robust conservation efforts. Canadian and US harvesters continue to use the ecologically sensitive approach of single baited traps attached to lines and hauled one trap at a time. Strict regulations, including restricted season openings, protection for juvenile and egg-bearing females, minimum and maximum carapace size limits, additionally ensure the health and future of the fishery.
