Also known as Unagi Sauce, this โAuthentic Eel Sauceโ is a sweet and salty glaze / marinade that can be used in a variety of ways. Think of it like a thick, sweet teriyaki. In sushi bars it is commonly lacquered onto cooked eel or drizzled atop caterpillar rolls and other creations. It is a great grilling sauce for meaty fish, such as swordfish, salmon and tuna, as well as steak, chicken and vegetables. Use for hamachi kama, or with your fried rice or stir fry.
