The grouper species we sell include baqueta (Epinephelus acanthistius), bayas (Mycteroperca jordani), and leopard grouper (Mycteroperca rosacea), which in Baja California is commonly referred to as cabrilla. You may get one species or another depending on harvest and time of year.
Grouper is an all-around excellent white meat fish that offers a moist, firm texture and slightly sweet, mild to medium flavor. It’s perfect for just about every cooking application so feel free to use it in any recipe calling for white fish!
The average size of grouper is 5 to 20 pounds, yet some species can reach up to 6 1/2 feet long and 200 pounds! Most groupers are found in deeper waters of the Sea of Cortez. Groupers are caught year round, typically by hook and line, with best availability from January to July.
