Canadian Sashimi Grade Salmon (Sake), Farmed

This Atlantic salmon is responsibly farmed by Marine Harvest in the clear, cold waters of British Columbia. A wonderful choice for your sashimi and sake sushi, it is high quality, free of steroids and hormones, and delightfully fatty. It’s also a rich source of Omega 3s. Fresh fish come into our facility whole, and we then hand cut, Proton Freeze, and vacuum pack our portions. The expedient, deep-freeze technology of the Proton Freeze ensures the salmon is safe to enjoy raw and also preserves its just-cut quality.

Fillets are skin off.

Sustainability

Marine Harvest Canada farms Atlantic salmon using an integrated system of brood stock selection, freshwater hatcheries, saltwater farms and state-of-the-art processing plant. Its select ocean sites are located in deep, remote bays where strong ocean currents and cold, oxygen rich water abound. These are ideal conditions for salmon, with minimal impact on the natural surroundings.

Salmon poke pieces

Salmon Poke Pieces

Poke, which means “to cut into pieces,” is as culturally significant to Hawaii as hamburgers are to the mainland. Dating back to the islands’ first Polynesian settlers, the dish combined chunks of reef fish, seaweed, kukui nuts and salt. Although Ahi eventually replaced reef fish as modern fishing techniques emerged, today’s many variations of poke feature salmon, scallops, shrimp & more.

From Chilean farmed salmon, these poke pieces offer a firm yet buttery texture, wonderful flavor and great fat content. They are pre-cut and individually quick-frozen (IQF) before being vacuum sealed in 1-lb packs. Obviously perfect for poke, but you can also use them for salmon stacks, tartare, ceviche, seafood salads, stir fry and more!

Abalone (Awabi), Live Sashimi Grade

Please note that we do not guarantee that live abalone will be alive upon delivery. Also, live abalone is typically not in stock during lobster season, which runs each year from early October to mid-March.

Our live, farm-raised, small red abalone (Haliotis rufescens) are responsibly grown in abalone farms in Baja California. Live and raw abalone is used for awabi sushi or eaten as sashimi. It may also be served steamed, salted, boiled, chopped, or simmered in soy sauce. A true delicacy, abalone is popular for its chewy texture.

Typically you will receive 3-5 abalone per pound (in their shells), and they are 1-2″ in length.  Once harvested from the farm, our red abalone are kept alive in tanks at our facility until they are shipped. They are packed with extra oxygen and proper insulation, so they arrive at your door fresh and ready to eat!
