Ono is a Hawaiian word meaning “good to eat.” This fish is commonly known as wahoo (Acanthocybium solandri) and is a close relative of the king mackerel. It is characterized by its very elongated, tuna-like body, dark blue-green coloring on the top and silver on the sides, and a massive set of teeth.
Wahoo is often in high demand from seafood connoisseurs who prize it for its delicate, white, high-quality flesh. It offers a mild, sweet flavor with a large, circular-flaked texture.
