Our proton frozen bluefin chunks are simply imperfect cuts leftover from our nicer-trimmed portions. Rather than waste them, we say, eat them! Keep on hand for a quick sashimi snack, sushi rolls, poke bowls and more. You could even flash sear them and serve with steamed rice, roasted veggies or salad.

What is Proton-Frozen?

Proton-freezing is a quick-freeze technology that combines evenly distributed electromagnetic waves and cold air to reduce ice crystal formation and cell membrane damage. As a result, taste and texture are preserved naturally, without any additives or chemicals. Color is also comparable to fresh if fish is properly stored and defrosted*.

*Certain species, like tuna, naturally turn brown once exposed to air or if stored in a traditional freezer. Proton freezing technology slows this process but does not prevent it. For best results, we recommend placing proton frozen tuna in the coldest part of your freezer and storing for no more than 7 days. When ready to eat, slowly defrost in refrigerator and consume within same 24 hours.

Spot Prawns (Amaebi), Live

Spot prawns are alive when packed for shipping. Due to their delicate nature we do not guarantee they will be live upon delivery. They will, however, be fresh and safe to eat upon delivery.

Our spot prawns, also known as sweet shrimp, are responsibly trap-harvested off the coast of Southern California from mid-February into the fall. We receive them live, store them live in our tanks, and carefully package them per order to ensure that they arrive fresh at your door.

Spot prawns have the sweetest taste of any shrimp with a soft lobster-like texture and silky finish. They are quite popular in sushi bars, where they are known as amaebi. Their ample tails are commonly eaten raw as sashimi or sushi, while the heads are often deep fried and enjoyed whole. Alternatively, you can grill or boil these shrimp as you would other types of shrimp, or use them for shrimp tempura! Making paella? Top with a few cooked spot prawns for the ultimate presentation!

Please note that spot prawns are not all the same size and we cannot guarantee the number of shrimp you will receive. The average size is typically 7-10 shrimp per pound; however, at times they do run larger at 5-7 shrimp per pound.
