Authentic Eel Sauce

Also known as Unagi Sauce, this “Authentic Eel Sauce” is a sweet and salty glaze / marinade that can be used in a variety of ways. Think of it like a thick, sweet teriyaki. In sushi bars it is commonly lacquered onto cooked eel or drizzled atop caterpillar rolls and other creations. It is a great grilling sauce for meaty fish, such as swordfish, salmon and tuna, as well as steak, chicken and vegetables. Use for hamachi kama, or with your fried rice or stir fry.

A true delicacy, eel (Anguilla anguilla) has a firm texture, high fat content and full, distinctive flavor. Unagi sushi refers to farmed freshwater eel that has been barbequed, and basted in a sweet, savory lacquer known as eel sauce.

To prepare, simply thaw in refrigerator overnight and then broil in the oven to bring to temperature.
