Ingredients:
- 2 tablespoons butter
- 1 lb large shrimp, shelled, deveined and butterflied
- 1/4 – 1/3 cup of your favorite BBQ sauce
- Freshly cooked rice for serving
- Lemon wedges
- Green onions, diced for garnish
How to Prepare:
- Heat cast iron skillet or wok on high, add butter and shrimp and cook until shrimp are almost done, about 2 to 3 minutes
- Add BBQ sauce to shrimp and heat until sauce is bubbly, about a minute
- Serve shrimp over rice and garnish with lemon and green onions
