Opah “BLT” with Seaweed Green Goddess Dressing

Perfect for anyone who has access to a smoker, this is pescatarian comfort food at its most delicious! Courtesy Davin Waite of Wrench & Rodent Seabasstropub.

Ingredients:

Opah Bacon:

  • 5 lbs opah belly
  • 3 cups green tea
  • 1 tsp curing salt
  • 2 tsp black peppercorns
  • 1 tsp pink peppercorns
  • 2 cups brown sugar
  • 1/8 salt
  • 1/4 cup crushed black pepper

Seaweed Green Goddess Sauce:

  • 6 sheets roasted nori
  • 4 oz sushi vinegar
  • 2 oz sesame oil
  • 4 oz water
  • 2 egg yolks
  • 5 oz blended oil

BLT

  • Toasted slider buns
  • Opah bacon
  • Tomato
  • Lettuce
  • Goddess Sauce

How to Prepare:

  1. You will first need to make the opah bacon. In a large bowl, make brine by combining green tea, curing salt, and black and pink peppercorns. Cut opah belly into strips roughly 1 inch by 1/2 inch (maximizing surface area to absorb smoke). Place in brine and leave overnight.
  2. Strain brine and retain the pieces of opah. Make your rub by combining brown sugar, salt and crushed black pepper. Toss opah in rub to coat.
  3. Place on smoker for roughly 2 hours at 180 degrees.
  4. To make the goddess sauce, to a blender add nori sheets, sushi vinegar, and toasted sesame. Turn on blender to medium speed, add in egg yolks, followed by both oils drizzling them one at a time. After all the oil has been incorporated, add in some water to thin it out.
  5. Build your BLT by spreading a bit of dressing on the bottom bun, then layering up with lettuce, tomato and a piece of opah bacon, followed by more green goddess and the top bun. Serve with fries, chips or side dish of your choice!
