Tuna Nachos

Score major points on Super Bowl Sunday or any other day with this crowd-pleasing spin on nachos!

We used sushi grade ahi but bluefin or albacore works just as well. You could also use salmon if you prefer. Amounts are for one large sheet pan and will serve 4-6 people depending on what other snacks or dishes accompany. Cut recipe in half if serving just 1-2 people. Fair warning: These are likely to disappear quickly!  Recipe by Lindsay Evans Smith (@_LindsayEats_) for Catalina Offshore Products.

Ingredients

  • 20-24 wonton wraps, halved diagonally
  • 6 Tbsp kewpie
  • 1-1/2 tsp Sriracha, more to taste
  • 1-1/2 tsp soy sauce
  • 1lb sushi grade ahi, cubed
  • 1/2 cup diced mango
  • 1 medium avocado, diced 
  • 1 fresno chili, halved, seeded, thinly sliced
  • 4 radishes, thinly sliced
  • Handful cilantro leaves, stems removed
  • 1/2 handful microgreens
  • Sesame seeds to garnish

Directions

  1. Working in batches, fry wonton triangles until barely golden, flipping in between, and set aside on paper towels to dry. 
  2. Fill the bottom of a large cast iron pan 1/4 inch full of avocado oil and heat on medium-high until oil shimmers.*
  3. Whisk together Kewpie, Sriracha and soy sauce.
  4. Once wonton chips are cooked, layer them on a platter.
  5. Top with tuna, mango, avocado, chili, radish, cilantro, and microgreens.
  6. Drizzle kewpie mixture over plate.
  7. Dig in and enjoy! 

*If you have an air fryer, you could skip this step and air fry the wonton triangles instead
