Our Gold uni (A Grade) from Baja is about the closest you can get to our California Gold uni. This is due to it being the same species of sea urchin and our sharing the Southern California coastline with Baja California. The only real difference between this uni is its country of origin. Like our California uni, it provides a sweet, ocean fresh flavor and succulent texture that melts in your mouth. It’s great right out of the package, or as part of any sushi experience!

For maximum enjoyment, consume within 3-5 days upon delivery. Please note that slight variations in color and texture may occur within the same package.

Commonly referred to as roe, the bright orange to pale yellow “tongues” of uni found in every urchin are actually the urchin’s reproductive organs. Uni has long been considered a delicacy in Japan and sushi bars worldwide, and in some cultures is considered an aphrodisiac!

Uni Grades*

Gold (A-Grade): Bright gold, yellow or orange color. Creamy yet firm texture. Fresh ocean scent and ocean-sweet taste. Uni pieces are large and complete intact. This is exceptionally high-grade uni for use for top-quality sashimi and sushi.

Vana (C-Grade Uni)

Vana (C-Grade) is uni that doesn’t fall into a Gold or Premium category. It is dark yellow or orange, or may even appear brown in color. The uni pieces may be intact but are mostly broken and ultra-soft texture. For these reasons, vana is not recommended for sushi presentations. Vana may still be, and often is, enjoyed raw. It offers a slightly bitter, almost nutty flavor. Because of its melty consistency, chefs often use it in pastas, soups, and sauces as a thickener and to create desirable umami flavor.

The highest quality uni you can find on the market is gold uni (A Grade). Bursting with sweet, ocean-fresh flavor, gold uni boasts a beautiful bright yellow/orange color and a slightly firmer mouthfeel than premium uni. Sushi aficionados agree that uni is an essential part of any sushi experience, and gold uni sushi is as good as it gets!

Note: Availability of gold uni is extremely limited and demand often exceeds supply. The gold uni you receive may originate from Southern California or Baja California. It is the same species and harvested from nearly the same body of water. For maximum enjoyment, consume within 3-5 days upon delivery. From responsibly managed fisheries in California and Baja California we receive the sea urchin species, Strongylocentrotus franciscanus. These urchins range in color from dark blackish purple to red in color and average 1lb each. They are harvested by divers who use hand held rakes and nets. Inside every one of these sea urchins is the prize: bright orange to pale yellow “tongues” of uni. Commonly referred to as roe, these soft golden tongues are actually the urchin’s reproductive organs.
