Wild Bluefin Toro Frozen

Wild Bluefin Toro, Sashimi Grade Tuna Belly

Toro is the term for the fatty part of the tuna, found in the belly portion of the fish. Especially prized by sushi chefs and aficionados, toro presents a pink to white color with a rich, buttery taste. Due to its high fat content and distinctive flavor, toro is best enjoyed raw. Our sashimi-grade bluefin toro is hand-cut in-house from whole ranched Pacific bluefin tuna (Thunnus orientalis).

Each bluefin toro portion is approximately 5 oz each and Proton Frozen to preserve its color and texture with out any additives. Note that certain species, like tuna, naturally turn brown once exposed to air or if stored in a traditional freezer. Proton Freezing technology slows this process but does not prevent it. For best results, we recommend placing proton frozen tuna in the coldest part of your freezer and storing for no more than 5-7 days. To defrost, place the packaged frozen portion in cold water for 15 to 30 minutes, until thawed. Remove from packaging, then pat dry, and enjoy. Alternatively, remove frozen fish from packaging, wrap with a paper towel and place in the refrigerator to defrost overnight.

Yellowfin Saku, Sashimi Grade Ahi

In Japan the term saku means block. Saku is commonly served as maguro in sushi bars. Because of its uniformity, yellowfin saku is often preferred by Japanese chefs for sashimi and other sliced presentations.

Ideal for making ahi sushi or for pan searing, our premium yellowfin saku is boneless and skinless with blood line removed. It has been super-frozen at -40 degrees Celsius in under an hour to eliminate deterioration of the cells in the meat. The result is a noticeably firmer texture. It has also been treated with carbon monoxide (CO) for color enhancement.

This wild product originates in Asia and is provided by Krimson, a brand known by chefs for consistent quality and exact portions. Frozen/vacuum packed pieces are approximately 10 oz each.

Hamachi, Japanese Farmed Sashimi Grade Yellowtail

Our exquisite farmed hamachi (amberjack / buri) is ideal for yellowtail sashimi and sushi. Very popular among sushi chefs, it provides a desirable high fat content that is distributed exceptionally well throughout its flesh. This helps to give the fish its crisp bite, buttery mouthfeel, and slightly sweet, ocean fresh flavor.

This product is super frozen with filtered wood smoke (CO treated), which is used as a preservative and guarantees the highest quality for your favorite sushi and sashimi applications. This freezing method also allows you to store the fish long term in your freezer to enjoy later at your convenience!

What’s in a Name?

Hamachi is also referred to as buri (young yellowtail), Japanese yellowtail, or Japanese amberjack. The term amberjack is a generic term used for several different species in the Jack family, including the Japanese yellowtail (Seriola quinqueradiata), the Pacific California yellowtail (Seriola lalandi) and longfin yellowtail or Kampachi (Seriola rivoliana), and the Western Atlantic’s Greater amberjack (Seriola dumerili). The latter has the unfortunate reputation of being inedible. It is not to be confused with the highly regarded Japanese species!

Fish are then transferred to ocean pens off the coast of Baja California where they are fed until time of harvest, resulting in a much higher fat content that strictly wild tuna.

Also known as Northern bluefin, it is the darkest red and fattiest of any tuna, with a distinctive flavor and firm texture. It is best served raw as sashimi or nigiri sushi, or seared rare to medium-rare. Cooking bluefin “well done” is generally not advised as it produces a strong fish taste and aroma.
