Sushi grade tilapia, known as Izumidai or Izumi-Dai, is high quality, firm fish with a mild, clean taste. It is commonly used in sushi bars as shiromi, a generic name for any kind of sushi that has a piece of white-fleshed fish as the topping. Our farmed Izumidai is a product of Ocean Blue Products and originates in Taiwan. Frozen fillets are skinless and boneless.
