We’ve teamed up with SideYard BBQ by HotMess to bring you this San Diego-caught, San Diego-smoked tuna! Tuna makes an excellent choice for smoking due to its flavor, meaty texture and fat content. SideYard takes our wild caught grill grade ahi and smokes it over white oak, the signature wood of central Texas BBQ. Often used for the production of whisky barrels, white oak imparts a delightfully smoky, slightly sweet, vanilla-tinged flavor reminiscent of bourbon. Enjoy our smoked tuna as a snack on the go, in a sandwich, flaked over salad or pasta, or as part of a charcuterie platter. It’s delicious on its own or paired with accompaniments such as mango chutney, BBQ sauce or spicy mustard. We highly recommend trying it on crackers with a drop or two of Cien Chiles ‘The Mustard’! Due to consumer preference for sushi grade tuna, we are often left with large volumes of cooking grade tuna. It’s perfectly good tuna except that it’s not a pretty red color and therefore isn’t good for sushi and sashimi presentations. Smoking this fish allows us to reduce and avoid waste and provide a healthy and delicious source of protein for our customers.
