Red Boat uses only black anchovies caught in the crystal clear waters of Vietnam’s Phú Quốc archipelago. Once harvested, the fish are immediately salted the fish to preserve freshness. For fermentation, anchovies are brought back to the barrelhouse and stored for 12 months in large wooden barrels. This provides a clean, natural umami flavor. After fermentation is complete, the first extraction from the barrel is bottled.
