Kewpie "Original" Mayonnaise
Extra smooth mayo made with rice vinegar not distilled vinegar, only egg yolks, and no added salt or sugar
When it comes to using mayonnaise in Japanese dishes, there’s nothing quite like Kewpie! With its rich and creamy texture made from egg yolks and a unique blend of vinegars, this Japanese mayo provides a satisfyingly rich and smooth consistency, refreshing aroma and tangy depth of taste not found in standard American supermarket mayos. It also boasts the coveted “fifth taste” known as umami, a term used to describe the savory flavor of a food. Loved by chefs, Kewpie is commonly used in sushi bars for spicy rolls and dynamite sauce. To whip up your own dynamite sauce at home, combine a quarter cup of Kewpie with one tablespoon Sriracha hot sauce (add more to taste). You can also add masago for texture. Kewpie works great on salads and vegetables, too. Mix a third cup of Kewpie with two tablespoons white miso and one teaspoon soy sauce for a delicious Japanese-style dressing.
