If & When Bay Leaf Black Pepper Preserved Meyer Lemon Paste is a flavor trifecta infused with the mild sweetness of Turkish bay leaves, the rich flavor of Tellicherry peppercorns, and just a hint of garlic. It’s a favorite for dairy-based sauces for fish as well as melted butter and chopped garlic dip for fresh shellfish such as lobster and crab.
We also love this product on meatier fish like opah, swordfish, thresher shark and salmon, as well as shrimp and scallops or in a mignonette for oysters. A little goes a along way. The longer it rests on fish, the stronger the flavor. If you find it’s a little too concentrated, mellow it out with some olive oil. You can use this ingredient as a base for salad dressings and marinades, too!
