These ocean floor sugar snaps are a true delicacy. Ama Ebi or sweet shrimp in Japanese, California Spot Prawns are known for their succulent sweet flavor. Our Spot Prawns are harvested alive in traps in deep submarine canyons off the San Diego coastline. The animals are maintained in live tanks at Catalina Offshore for shipping and are available from late February to September whenever fishing weather permits.

The California Spot Prawn has a stunning appearance with shells the color of sun ripened apricots. Adult prawns make daily migrations from depths of up to 1500 feet, through the water column to feed at night. Their cold water habitat at depth requires careful handling techniques to maintain the animals alive from the boat to our plant where they are transferred to cold water tanks and held for shipping.

Spot prawns are abundant, and well managed by limited entry fishing permits using only live trapping methods. The harvesting results in very little by catch in contrast to the large invasive trawl nets used to harvest these shrimp in the Pacific Northwest.

FishWise and SeaFood Watch consider Spot Prawns a good alternative to less sustainable varieties. These delicate shrimp are often served with their heads on, where the juices add significant flavor. Often eaten raw in sushi bars or lightly steamed in other applications, this shrimp when delivered live, demands a minimalist approach to cooking and preparation. Frozen applications for Palleas and in a seafood soup are also popular.
