Product Descriptions

Members of the Sciaenidae family of drums and croakers, our Corvina are drawn from Baja waters and are noted for the noises they make. The difference between a Drum Fish and a Croaker is that one makes a distinct drumming sound and the other makes a croaking sound.

Corvina has an excellent, mild and sweet flavor with firm, large flaked flesh. This delectable fish is free from any "fishy" taste and resembles Snapper. It is pinkish when raw but cooks up white.

Corvina has a high fat content making it ideal for all types of preparations such as baking, broiling, frying or grilling. The delicate flavor also makes it perfect for all types of marinades and ceviches.

Corvina run during the early spring, February until April. Fishing is trade permitted and caught mostly by net and hook in line by small panga boats in the Sea of Cortez.
