Product Descriptions

Adult California halibut live in bays and estuaries at depths up to three hundred feet from San Diego up to the San Francisco coastal waters. They prefer a sandy bottom although they can be found in the hard bottom areas.

Adults spawn throughout the year with peak spawning in winter and spring. Mature females can produce hundreds of thousands of eggs with each spawning. Some larger California Halibut females can produce millions of single round eggs with each spawning. Male halibut usually mature when they are 2 or 3 years of age. Females usually mature when they are 4 or 5 years of age and are believed to live for more than 30 years.

Halibut is one of the easiest fishes to prepare. This meaty thick white-fleshed fish has a mild flavor and a delicate but large flake. Best cooked well done, roasted, sauteed, or broiled. The fish serves well whether complemented with sauces or more simply prepared.
