In the Hawaiian language, “Ahi” refers to two highly migratory, fast-growing tuna species, the yellowfin and the bigeye. The yellowfin tuna is perhaps the most recognized tuna species for its bright yellow fins and yellow stripe across its body. Yellowfin are found in tropical and subtropical ocean waters throughout the world and tend to school with fishes of the same size, including other species of tuna such as bigeye. As a tropical species, yellowfin occupy the warm surface waters of all oceans. It is among the larger tuna species, reaching up to 7 feet long and up to 440 pounds.
Tuna is graded by color and presentation. Regionally you’re likely to see grade differences from one distributor to another. The professional grading process is subjective and there are no industry standards. This is why it is important to develop a relationship with a supplier you trust who maintains high and consistent standards when it comes to grading tuna.
Yellowfin provides a moderate flavor and firm, lean meat. The taste difference between yellowfin and bigeye tuna is barely discernible. Like bigeye, yellowfin also lends itself to grilling and searing and can withstand full-flavored seasoning such as blackening spice. It is best served as sushi or cooked rare to medium-rare.
